I’m so sorry you’re having to deal with it too. Kolleen, it’s not bad, I’ve lived with it so long now (19 yrs), that I’m very comfortable with my food choices. It is funny how others at work (healthcare professionals) tend to be concerned for my food choice ability or lack knowledge of the illness. It is an autoimmune process, most celiacs do not have the enzyme glutenase that helps the body break down gluten. If a gluten free diet is not maintained the body can react in developing additional autoimmune processes like diabetes, RA, lupus, thyroid, stomach CA and a few others. Glad to hear you're doing well. Also look out for diabetics grabbing gallon buckets of Costco Cream Puffs. One bucket is a serving. By the way, that's Bob, not me. I do not have any dietary restrictions other than portion control so when I'm at the Banquet I was a huge plate of this! Imagine a cup of heavenly tea with that...
